Ingredients
6 cup collards, spines removed and leaves chopped
2 Tbs olive oil
1/2 cup onion, chopped
1 cup tomato sauce, prepare
4 eggs

Remove tough spines from collard and chop leaves.
Create Tomato Sauce with Collard and Eggs
Add oil to a large sauté pan and add the onion. Sauté over medium flame until soft and fragrant.
Add collards and sauté for an additional 3 minutes until the leaves turn bright green.
Add tomato sauce and stir the mixture to incorporate.
Make 4 wells in the mixture and crack an egg into each.
