Tomato Sauce with Collards and Eggs

Ingredients

  • 6 cup collards, spines removed and leaves chopped

  • 2 Tbs olive oil

  • 1/2 cup onion, chopped

  • 1 cup tomato sauce, prepare

  • 4 eggs

Recipe. Prep

  1. Remove tough spines from collard and chop leaves.


Create Tomato Sauce with Collard and Eggs

  1. Add oil to a large sauté pan and add the onion. Sauté over medium flame until soft and fragrant.

  2. Add collards and sauté for an additional 3 minutes until the leaves turn bright green.

  3. Add tomato sauce and stir the mixture to incorporate.

  4. Make 4 wells in the mixture and crack an egg into each.

  5. Reduce heat to low and place a lid on the pan.

  6. Cook until eggs reach desired doneness.

  7. Season with salt and pepper.
